I created my domain's dns entries through vpsville , which automatically creates an MX record for the mail subdomain on my vps IP. Now I want to change that MX record to an SMTP relay service. Is that possible?

Hi,

Our DNS service will just point to your server, and/or Google for mail. Anything more complex will require custom DNS.

I suggest you get check out: everydns.com or afraid.org

Thanks, I used GoDaddy's Total DNS Control to get the job done.
